Sweeteners: questions & answers
Is gur (jaggery) healthier than white sugar?
Gur and shakkar are unrefined, so they retain some minerals and a deeper flavour that refined white sugar loses. They're still sugar, though, so the honest framing is “less refined”, not something to eat without limit.
What's the difference between gur, shakkar and brown sugar?
Gur is cane juice set into solid blocks; shakkar is gur crushed into a loose powder that's easiest to stir in; and unrefined brown sugar keeps some molasses for its colour and caramel note.
Can I use these instead of sugar in tea or baking?
Yes. Shakkar dissolves easily in tea and coffee, and unrefined brown sugar usually swaps 1:1 for white sugar in baking, giving a moister result.
