Oils: questions & answers
What do “cold-pressed” and “wood-pressed” actually mean?
The oil is pressed out mechanically without added heat — wood-pressed (kachi ghani) is the traditional slow press. Because it isn't bleached or deodorised like refined oil, it keeps its natural colour, aroma and character.
How should I store cold-pressed oil?
Keep it away from light and heat, cap it tightly, and use it within a few months. Cold-pressed oil is a fresh product, not a long-life refined oil.
Which oil should I cook with?
Mustard oil suits high-heat desi cooking, tempering and pickles; extra-virgin olive oil is best for finishing, dressings and gentle cooking, where its flavour isn't wasted by very high heat.
